Olive Oil Poached Fish with Saffron and Lemon

This dish is a testament to simplicity, flavor, and the bounty of the sea. Olive oil poaching is a technique that involves cooking fish in a low-temperature oven in a generous amount of olive oil. This method ensures that the fish stays moist, tender and flavorful, without any risk of overcooking or drying out.

Ingredients:

  • 4 (6-ounce) halibut fillets
  • Salt and pepper
  • 2 cups of Al Jouf Organic extra-virgin olive oil
  • A pinch of saffron threads
  • 1 large lemon, thinly sliced
  • 1/4 cup of fresh parsley, chopped
  • 2 tablespoons of fresh mint, chopped

Instructions:

  1. Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.
  2. Pat the fish dry with paper towels and season with salt and pepper on both sides.
  3. In a small saucepan over low heat, warm Al Jouf organic olive oil with the saffron threads until fragrant, about 10 minutes. Do not let the oil boil or smoke.
  4. Arrange the lemon slices on the prepared baking sheet in a single layer. Place the fish on top of the lemon slices and pour the olive oil mixture over them, making sure they are fully submerged.
  5. Bake for 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Transfer the fish to a serving platter and spoon some of the oil over them. Sprinkle with parsley and mint and serve hot or at room temperature.
