Ingredients:
To prepare falafel:
- 2 cans (15 ounces each) of chickpeas, drained and rinsed
- A quarter cup of chopped red onions
- A quarter cup of chopped fresh coriander
- A quarter cup of fresh chopped parsley
- 3 garlic cloves
- 2 tablespoons of lemon juice
- 1 teaspoon of cumin
- Half a teaspoon of salt
- A quarter teaspoon of pepper
- A quarter cup of oat flour
- Oil for greasing the baking tray
To prepare tahini sauce with olive oil:
- A quarter cup of tahini
- 2 tablespoons of lemon juice
- 1 clove of garlic
- Quarter teaspoon of salt
- An eighth of a teaspoon of pepper
- 2 tablespoons of cold water
- 2 tablespoons of Al-Jouf organic extra virgin olive oil
Instructions:
- Preheat the oven to 400°F (200°C) and grease a baking tray
- In a blender, pulse the onion, cilantro, parsley, and garlic until coarsely chopped
- Add the chickpeas, lemon juice, cumin, salt, and pepper and pulse until well combined but still coarse
- Move the mixture to a large bowl and add the oatmeal
- Shape the mixture into small patties (about 2 inches in diameter) and place them on the prepared baking sheet
- Bake for 15 minutes, then carefully flip and bake for another 10 minutes until it's golden and crispy.
- While the falafel is baking, make the tahini sauce with Al-Jouf Organic Olive Oil
- In a small blender, blend tahini, lemon juice, garlic, salt, pepper, water, and organic olive oil until it's smooth and creamy.
- Move the sauce to a small bowl and refrigerate until it's ready to serve
