Spiced Olive Oil Baked Fish

Ingredients

  • 4 white fish fillets (about 6 oz each)
  • Salt and pepper to taste
  • 6 tablespoons of Al Jouf organic extra virgin olive oil
  • 10 garlic cloves, minced
  • 15 fresh basil leaves, sliced
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 teaspoon of dried oregano
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 2 bell peppers (any color), sliced
  • 3 shallots, sliced

Instructions

  1. Pat the fish dry and season with salt and pepper on both sides. Place the fish in a large zip-top bag or a shallow baking dish.
  2. In a small bowl, whisk together the Al Jouf organic olive oil, garlic, basil, lemon juice, oregano, coriander, and paprika. Pour the marinade over the fish and seal the bag or cover the dish with plastic wrap. Refrigerate for 30 minutes.
  3. Preheat the oven to 200°C (400°F) and lightly grease a baking sheet with some olive oil.
  4. Arrange the bell peppers and shallots on the prepared baking sheet in an even layer. Season with salt and pepper to taste.
  5. Place the fish on top of the vegetables and pour any remaining marinade over them.
  6. Bake for 15 minutes or until the fish flakes easily with a fork.
  7. Enjoy your spiced olive oil baked fish with some lemon wedges if desired.
