Grilled chicken with olive oil and thyme

This is not just a grilled chicken recipe, but a recipe that combines our love in Saudi Arabia for grilled chicken, the health benefits of olive oil, and the refreshing and glamorous thyme flavours. Preparation time: 10 minutes. Marinating time: at least 30 minutes up to overnight.

Cooking time: 14 minutes on the grill or 25 to 30 minutes in the oven.

Enough for: 4 people.

Iingredients:

  • 4 boneless, skinless chicken breasts (or chicken thighs)
  • A quarter cup of organic extra virgin olive oil, Al-Jouf
  • A quarter cup of lemon juice
  • 2 tablespoons of thyme
  • 4 garlic cloves, chopped
  • Salt and pepper,as desired

 

Instructions:

  1. Make small slits in the chicken breasts using a knife and set it aside.
  2. In a large bowl, mix the Al-Jouf organic olive oil, lemon juice, thyme, garlic, salt and pepper and whisk it until well combined.
  3. Dip the chicken in the prepared mixture, cover the bowl with a plastic lid, and place it in the refrigerator for at least 30 minutes up to overnight.
  4. Preheat the grill to medium-high heat and oil the grates.
  5. Grill the chicken for about 7 minutes per side or until fully cooked and charred on the edges.
  6. Move the chicken to a plate and let it rest for 10 minutes before cutting and serving it.
